Choline

Egg yolks are important and excellent source of choline. Choline is an important element in a diet of a pregnant woman. Do you know what causes the color of the yolk? It gets its color from the yellow-orange plant pigments called lutein and zeaxanthin (it is 166 mcg of them in a Large egg yolk). They have been shown to reduce the risks of cataracts and age-related macular degeneration, which is the leading cause of blindness in those 65 and older.
